Glow Foods Recipe: Tunisian Kale Salad
Kale is one of the darkest leafy greens, and it packs in a heap of nutrients including calcium, iron, vitamins A and C, and chlorophyll. It tonifies the stomach, liver, and immune system. If you are a huge greens gal, you will love this salad. And if you aren’t you may well still enjoy it because the dressing is so tasty!
2 1⁄2 bunches dinosaur or lacinato kale 1 1⁄2 cups pitted green olives
1 1⁄2 cups diced red bell pepper
1 cup hempseeds
For the dressing:
1 cup raw tahini
1⁄2 cup lemon juice
4 tablespoons extra-virgin olive oil
4 tablespoons nama shoyu soy sauce 1 tablespoon raw agave nectar
1 ounce grated ginger
1 teaspoon spicy curry powder
1 teaspoon cayenne pepper
1 teaspoon sea salt
Slice the kale by the bunch across the ribs to get thin slices, and place in a large bowl. Add the olives, bell pepper, and hempseeds. Blend dressing ingredients to get a thick consistency, then pour over the kale and mix thoroughly. Can be served right away or made a day ahead. If you don’t plan to serve immediately, wait to dress the greens so they don’t get soggy.
