Glow Foods: Organic Truffled Popcorn
I have always been a lover of popcorn and much prefer popcorn made at home – for Netflix, than buying the packaged kind. But we don’t make just any popcorn- it’s the fancy kind- truffled popcorn of course! In my home we love flavors and this is something I make for the family as a treat and for my guests as well. We even bring it to the movie theater as well. Remember when using good quality ingredients- a little goes a long way. I like to use coconut oil because its a stable fat with a high smoke point, so it doesn’t damage the fat when you cook the oil, unlike olive oil- which is better used for finishing.
- ¼ cup coconut oil
- ½ cup organic popcorn kernels
- 2 tablespoons black truffle oil
- 2 teaspoons black truffle shavings (if available)
- Maldon sea salt, to taste
In a heavy pot, add the coconut oil over medium heat and add the popcorn kernels. Mix so the kernels are covered.
Put a lid on the pot and cook over medium heat, shaking occasionally. Cook until the kernels have stopped popping. Immediately transfer to a bowl. Drizzle with the truffle oil and if you are using the truffle shavings add those and a sprinkle of salt and toss the popcorn to distribute the truffle oil and the salt. Serve warm.
